Fangst: Seafood from Nordic Waters
Brisling No. 1- Baltic Sea sprat - lightly smoked, with heather and chamomile- Brisling’ is a small fish that traditionally was landed in great numbers along the Scandinavian and Baltic coastlines. Here it was prepared by hand and preserved in cans to be sold as a Nordic version of sardines.
Limfjord Blue Mussels- In the cold water of the Danish inlet Limfjorden, ‘blåmuslinger’ (blue mussels) grow slow to acquire a particularly fine taste and texture. Most of them are then shipped off to foreign kitchens but Fangst keeps some for themselves to bring you their version of the blue mussel: pack in a marinade of cold pressed rapeseed oil, apple vinegar, dill and fennel seeds.
Regnbue ørred: Danish freshwater trout, smoked with juniper and lemon thyme.- In his childhood, Martin co-founder of FANGST, enjoyed his many visits on trout farms with his father, a biologist dedicated to developing world class farming of trout in Danish freshwater. In this can, they have preserved a bit of that memory
